Sounds yummy! If kneading in the KitchenAid is a sin, then I have
been an unrepentant sinner for years. I can knead by hand when I
have to, but prefer to let the mixer save me the work. After the
dough-ball has formed, and it doesn't need any more flour, I leave it
to do its thing and start cleaning up my utensils.
The KitchenAid instruction book only calls for 2 minutes of
kneading at speed 2, IIRC, which I don't think is enough to really
develop the gluten. I usually give it about 7-8 minutes after the last
flour is added.
And, yes, an egg-wash gives bread a wonderful, glossy mahogany
finish. I don't usually bother with it (except on challah), but it
does give a special look to a loaf.
Sounds like your experiment was a resounding success. I look
forward to trying the recipe.
