SC - Rotkohl (Red Cabbage) OOP

Here's that red cabbage recipe I said I had.  Bear

2 Tbsp vegetable oil
2 small onions, sliced
2 lbs red cabbage, shredded
2 Tbsp vinegar
salt 
1 tsp sugar
1 large tart apple, peeled, cored and finely chopped
   or 1/2 cup applesauce
1/2 cup red wine
1/2 cup beef broth

Saute the onions in the oil
Add the cabbage
Immediately add the vinegar (helps retain color)
Add salt to taste
Stir in the sugar
Add apple, wine and beef broth.  Stir.
Cover and simmer 45 to 60 minutes.
Cook the cabbage until just tender. 

A little cinnamon can improve the flavor.
