The Black pepper sauce given in _The Medieval Kitchen_ is delicious...:
"Black poivre. Crush ginger and charred bread and pepper, moisten with
vinegar and verjuice, and boil (VT BN Scul 227)"
(We suggest using pumpernickel or rye bread)
