Frequently. Tongue, kidneys, heart, liver, lungs and various G.I. guts
(under headings like Noumbles) appear pretty frequently in medieval
source recipes. Later sources also refer to sweetbreads, cockscombs,
testicles (from capons, normally) in addition to the other stuff. And
then, of course, there's blood.
