This is a very good observation. The cultural requirements for grapes 
varieties  of all types are pretty much the same, So it makes sense that the  
varieties used to produce verjuice would be produced in areas that  were  
known for wine making also. While vineyards may produce a large portion of  
grapes designed for a specific use such as wine making, there are few 
vineyards even today that produce only wine grapes. Most (if not all) also 
produce table grapes, juice grapes, grafting stock varieties, etc. Not a few 
also produce other agricultural crops not related to grapes such as herbs, 
Biodiversity is the  key to a successful agricultural business, cushioning 
the impact of the failure of any particular crop.
