Ageed. There is no reason to expect the SCA fighters to provide for the  
needs of a wheelchair bound person so there is really no  reason to expect a 
historical cook to  change a recipe to provide for a person allergic to wheat 
or whatever. All persons are not expected to participate in fighting  (or 
indeed many activities in the SCA) so why would one expect all to be able to 
participate in eating medieval foood or to even want to? This is one of my 
buttons! Sorry. :-(
