My admittedly recent Larousse (1985) says nothing whatsoever about the
origins of either profiteroles or choux paste, nor does Harold McGee,
apparently. I wonder if Wheaton's "Savoring the Past" might refer to
this. Of course I can't find my copy at the moment and am heading out
the door in twelve seconds... maybe it'll turn up this evening.
