[Sca-cooks] Green tomato pie

    From my memories of the green tomato pie festival in Yolo County CA,
use your favorite  *apple*  pie recipe, subsituting gren tomato slices for
apple slices.   Lots of cinnamon!  YUM!

    crust for covered pie,

    for about 2 - 3lbs of sliced green tomatoes, mix in 3/4  to 1 cup sugar,
a heaping teaspoon of cinnamon (maybe half as much  nutmeg as well) a good
tablespoons of tapioca,  a splash of lemon juice, a pinch of salt.

    Pour this into the pie pan, dot with buttr  (2 tablespoons or so)  add
the top crust trim/flute bake

    Bake at 425F for 20 min, then reduce oven temp to 350F and bake another
30 - 45 min.

    Let it cool 3 -4 hrs before serving to let the filling thicken as it
cools.
