There's also Arabic cookery.  The new (expensive!) one (_Medieval
Arabic Cookery_) has several cookbooks from this general period, as
well as the one in Cariadoc's "Collection", the 13th century
anonymous one.  Some of the modern interpretations are in his
Miscellany and, I believe, on his website.
