I can attest to that.  I make marzipan at Chirharts cuz I don't have no
fancy fangled devices, preferring to chop, slice, bash, grind, etc by hand.
I can say their kitchen is a little "dustier" when I am done but then, I
make 7lb/7lb ratio which equals never enough marzipan.
