Vara answered the question about what fortified wines were with:

What do you mean by "air distilled"? Do you simply mean that some of
the water in the wine is allowed to evaporate? But in that case,
wouldn't the alcohol evaporate quicker?

So, for each of these three, what is the wine they start with? Is that
wine also sold? Or does all of it go through this process?
