Just downloaded a publication from the USDA that looks useful for SCA cooks,
especially newbies.  It's called "Cooking for Groups:  A Volunteer's Guide
to Food Safety."  It covers a lot of the basics of food preparation, such as
how to safely thaw food, avoiding cross-contamination, a table of internal
cooking temperatures for meat and how to correctly use a food thermometer,
how to safely chill and reheat, how long food can be stored in a fridge and
freezer, etc.

It's about 40 pages long and can be downloaded at:
