I have had good luck in the past doing rice for as many
as 225 plus by using the commerical Uncle Ben's and doing
it in the ovens in big roaster pans. There was a recipe
on the packages that gave the instructions for exactly how
mauch water to use and time/oven requirements. It turned
out fine.
