Your redaction is pretty much the same as your transliteration. The
redaction would be something more like:

Take one 3 pound stewing hen, cut the meat into chunks about 1 to 2
inches on a side, bring two quarts of water to a boil, put in the
chicken, let it boil for thirty minutes.
