I remember asking about period Greek foods myself. The main answer
I got was that Greece was part of the Byzantine Empire during most
of our period and to check for Byzantine food.

With that in mind, I would check these two files in the FOOD-BY-REGION
section of the Florilegium:
fd-Byzantine-msg (25K) 5/18/01 Food of medieval Byzantine. References.
http://www.florilegium.org/files/FOOD-BY-REGION/fd-Byzantine-msg.html
fd-Greece-msg (16K) 4/ 3/01 Food of medieval Greece. references.

This one in the FOOD section might also be of interest:
grape-leaves-msg (17K) 7/25/00 Use of grape leaves in cooking. Sources.
