[Sca-cooks] newbie Introduction

Some time back Phillip and I toured a champagne winery in California.  As part
of the tour, the guide explained the business of what is and what is not
champagne.  Evidently, back in the early 20th century (date escapes me!), all
of the countries who produce wines signed an accord which stated that the only
wine producing country who could refer to sparkling wine as "champagne" was
France...ergo, sparkling wines from other countries have different names...like
Asti Spumante from Italy.  However, according to this guide, the US did not
sign the accord, and therefore is exempt from this restriction.  But many of
the US producers adhere to the restriction out of respect, courtesy or
whatever, though some do not...and we therefore see American "champagne".
