Not a stupid question, but it's difficult to determine the "heat" by the
flame on the propane ring. It's so much bigger than a stove burner.  I'm
getting there, though. I'm considering using the propane ring to boil the
pig heads for the headcheese, especially if cooking them will stink up my
apartment.

BTW, maintenance was here to fix a minor irritation for me.  In passing, I
told the guy I'm a cook.  His response, "It must be you making all the
delicious smells around here."  He liked the biscotti, too.
