Sounds like your hosts were !) not very good cooks,  there's plenty out there without being so boring.  ,2) Maybe this was during that era when everyone depended upon 'Diet for a Small Planet' to learn how to eat no meat without risking nutritional disaster.  I've never eaten a recipe from that book that was tastier than eating the page would have been. The world of American vegetarian cuising has come a loooong way since then.

I think it's an offensive defensive stance.  Many people who become vegetarians spend a long time convincing those that love 'em that this dietary change is not going to cause them any harm.  So the usual way of discussing the topic is forceful reassurance.
