Try Ginger East to West : The Classic
 Collection of Recipes, Techniques, and
Lore by Bruce Cost.
It's listed as OP, so try your library. I still
think that it's the best volume on "ginger".
There are a number of other sources. The Karen
Hess notes are good on ginger... cited those
earlier today for the green ginger thread.
