I'm kind of assuming that most of them, if genuinely
period-documentable, will prove to be period dishes adapted for
finger-food use. Examples might include little mushroom and cheese
pasties from le Menagier, made in two-inch rounds in a cupcake tin or
something, perhaps made in a sheet-pan and cut into squares or diamonds
when cold, egredouce of fried fish or chicken in boneless bite-sized
chunks, sitting in their sauce to be attacked with toothpicks or
something. And then, of course, there are cuskynoles.
