Help!!

Does anyone have any good ideas as to where to look for
reference materials for medieval dutch food?  

Here's the deal:  I signed on to do a medieval dutch dayboard
three weeks hence.  Actually, I signed on to do this a while
ago, but (lacking in communication) I was under the impression
that the event had been cancelleled until just recently.

The catches are these:  I have a budget of $3 per person, there
are no cooking facilities on site, and I will not be at the
event until late in the evening due to my work schedule.  

I need reasonably documentable foods that can be made the night
before and served cold.  I was thinking along the lines of
pates, sausages, pies and the like but I can't find any better
documentation than some fairly ambiguous dutch paintings.

The ostensible "historical location" of the event is Brugge in
the late 1400's.  Does anyone have any suggestions for me?
