Nanbanryori (Southern Barbarian Cuisine)
Pluck the hair (sic) from a chicken and remove its head and feet,
then wash it and place
it in a pot. Cut a daikon (giant white radish) into large pieces and
add it to the pot. Put
water in the pot till it covers the daikon and chicken. Boil until
the daikon becomes
soft. Remove the chicken and pluck the meat into thin strips.
(Basically, shred the
chicken.) Return the chicken to the cooking broth. Season with sake
and salt. You
can also add garlic. At the last minute, add light miso, hiratake
mushrooms (lit.
flat mushrooms these are most likely kinoko mushrooms), nebuka (this
is an alternative
name for negi which is a welsh onion Allium fistulosum), and other similar
vegetables.
