SC - SCA rules on serving wine?

Welcome to the List, My Lady.  I know that there are several individuals on this list
who have done wonderful things with sotelties and I'm sure would be willing to share.
Also, there is always the ubiquitous Florilegium, where I'm sure you would find a
number of articles/recipes/etc.
