There are some comments on La Varenne, his role in culinary history, his
contemporaries and on some culinary polemics in 
- -- Jean-François Revel: Un festin en paroles. Histoire littéraire de la
sensibilité gastronomique de l'Antiquité à nos jours. 1979.
There is a German translation ('Erlesene Mahlzeiten', 1979), and an
English translation ('Culture and cuisine. A journey through the history
of food', 1984), too.
