You can't ;-)
Dietary pyramids go out the window at feasts. About the only way to get
people to eat the veggies is to incorporate them thoroughly with the
meat. A good rule of thumb is - with veggies and grains, even though the
'official' serving is  one half to two thirds of a cup, realistically it
changes down to a quarter cup per serving. Most people I have sat with
will take a serving spoonful  [ a dab, as in 'give me a dab of that
brown glop, and a dab of those peas too' ] of whatever gets passed
around. Yes, tehre are people who will take appropriate serving sizes of
veggies and grains, but generally it is somebody like my lord husband
who really likes frumenty and will just fill a bowl with it. Short of
plating everything, you just sling out the hash [ ;-) ] and stuff gets
eaten.

sausages and didn't have much room for the other stuff.

to make Less dessert.

Despite requests for More Meat! More Meat! i don't plan to make more.
How to i get the diners to put grains and vegetables on their plates?
