[Sca-cooks] Creme Brulee

Creme brulee, Stefan is a custard that is made from egg yolks, sugar and
either milk or cream and a small amount of cornstarch. The egg tolks get
whisked with the sugar and cornstarch and the milk is brought to a boil.
Gently temper in the milk into the egg yolks and then pour the whole mess
back into the same pot. Stir constantly until thick enough to coat the back
of a spoon. Pour into serving dishes. Then they are set in the refrigerator
to cool and finish setting. Just before serving a small amount of sugar is
sprinkled evenly across the top. Use a blowtorch(acetalyne- sp) to melt the
sugar into a nice crisp crust. Should be creamy, and soft, with a light brown
coating of carmelized sugar on top. You know it's burned when the bottom of
the pot is scorched(ie milk solids deposit- ever let the hot chocolate boil
over?) and you get chunks or a scraping noise when stirred. Muirdach scorched
a gallon of it.(Or was it a litre? Nic?)
