just a quick note as this caught my eye..

a coulis in the baking trade is a non cooked sauce of fruite.

eg blueberries mixed with a touch of simple syrup, blended til lsmoothe and
strained would make a coulis.  I often make strawberry kiwi ones for cheese
cake during the summer at parties.. makes the snapple crew feel right at
home.
