It's probably quite good, but I don't think it's going to be anywhere near
period and certainly not medieval. Wouldn't you rather cook a period
dish for a Royal Feast at a premier SCA event like Pennsic? I assume the
Trimarian Royal edict against period foods is no longer in force?

We have discussed a number of period pork dishes and recipes here. I
could probably even point you to some, myself. :-)

But if someone does have a good recipe for this Cuban pork, I might
be interested in trying it at home.
