Many restaurants that serve exotic (or less familiar) cuisines offer a
special dinner, in addition to the ala carte items.  For example, an Indian
restaurant might offer a "Maharaja Dinner", with pre-selected soup,
appetizers, entrees, and dessert.  This is appealing to a customer who wants
to try an unfamilar cuisine, but doesn't know which dishes to choose.

A medieval restaurant could offer such a special dinner -- or even several
of them, divided by place and period.  There might be the "Richard II
Dinner" (taken from the Form of Cury), the "Medici Dinner", the "Carlos V
Dinner", etc.  A Lenten meal (and perhaps one which is vegetarian) might
also be popular.

I don't think it's necessary to avoid more "adventurous" foods such as
offal, but it might be an idea to put them on the appetizer menu, or to
offer them as part of a platter of varied foods.  Many people are willing to
experiment with a strange food, but don't want to chance that their entire
entree will be inedible.

So now I'm interested in what other people would do.  If someone
approached you to set up a restaurant like this, how would you do it and
what would you put on the menu?  Remember you have to appeal to the
general public.
