Supposedly, they had not yet been corrupted by physical contact with the
earth.  Similarly, the white flesh of certain birds was similarly
uncorrupted, by virtue of its color.  Beaver tail was also permitted, since
it had scales, but not the rest of the beaver.

So go figure...
