I don't know if this is what you have in mind, but here are 2 recipes you
might think about, one is a pudding more than a soup.

CHILLED STRAWBERRY SOUP

I.  2 pints strawberries
    1 cup orange juice
    1 1/4 tsp. instant tapioca
    1/8 tsp. allspice
    1/8 tsp. cinnamon
    1/2 cup sugar
    1 tsp. grated lemon peel
    1 Tbs. lemon juice
    1 cup buttermilk
    lemon slices to garnish
Wash and hull berries. Set aside 4-6 for garnish. Puree remaining berries in
blender and strain into saucepan. Add orange juice. Mix tapioca with 1/4 cup
of the puree mixture, add to saucepan with allspice, cinnamon, and lemon
peel. Heat, stirring constantly until mixture comes to a boil. Cook about 1
minute or until thickened. Remove from heat. Add sugar, lemon juice, and
buttermilk. Blend well. Cover & chill at least 8 hours.


Rosee
A Dish Flavored with Rose Petals

Author's Note: If you use fresh flowers for this pudding, please be sure they
have not been sprayed with harmful insecticides. Similar recipes call for
violets, primroses, and hawthorn flowers; you may wish to substitute one of
these. If you use fresh flowers, double the amount indicated.
Eaten alone, rosee is rather heavy and rich. You may wish to fold it into a
cup of whipped cream, use it as a topping for vanilla ice cream, or spread it
between the layers of a white cake.

1/2 cup dried, crushed rose petals
3 cups almond milk (see Cold Almond Milk)
1/2 teaspoon cinnamon
1/4 teaspoon powdered ginger
2 teaspoons rice flour
1 cup minced dates
3 tablespoons pine nuts (optional)
dash salt (optional)
optional garnish: fresh rose petals

Soak rose petals in almond milk for about 10 minutes.
Add cinnamon and ginger, and cook 3 top 5 minutes over low heat.
Add rice flour and stir until thickened.
Add dates and pine nuts.
Pour into individual custard cups or small bowl. Chill.
Just before serving, sprinkle with a dash of salt if you wish.
Garnish with fresh rose petals, if you like, or follow one of the suggestions
opoosite.

Serves 6-8
