About a year and a half a go there was a bit of hoopla in Sweden since
the Livsmedelsverket (roughtly equivalent to the US FDA) got a report
from Germany that some soy sauces contained excessive amounts of
cancerogenous substances (chloropropanols, 3-MCPD). They tested some
samples of the soy sauces on the market, and indeed found that some of
them did contain excessive levels, and said products were pulled from
the shelves.
A more reasoned report (than the 300 pt boldface tabloid scare stories)
can be found on
http://www.foodstandards.gov.uk/maff/archive/food/infsheet/1999/no187/187soy.htm
The interesting experiment would be for someone to make a batch -- or
preferably a few batches -- of murri, and getting them tested.
