About a year and a half a go there was a bit of hoopla in Sweden since
the Livsmedelsverket (roughtly equivalent to the US FDA) got a report
from Germany that some soy sauces contained excessive amounts of
cancerogenous substances (chloropropanols, 3-MCPD). They tested some
samples of the soy sauces on the market, and indeed found that some of
them did contain excessive levels, and said products were pulled from
the shelves.

The interesting experiment would be for someone to make a batch -- or
preferably a few batches -- of murri, and getting them tested.
