Regarding food mills, those  liing in the middle ages would have used a 
mortar and pestle to mash the  beans  thus producing a texture  unlike 
anything that  modern equiupment can produce. Have you tried mashing the 
beans in a mortar? Does the recipe indicate the age of the beans? Green favas 
have a very different texture than  dried mature favas.
