Semmel is a bread, I believe of German origin, which
uses (at least in my recipe) malted flour and whole
wheat flour. I have difficulty grinding malted wheat
(or even finding it sometimes), and so will sometimes
use F.S. Carbon's Malted Waffle Flour when making this
bread. It has a very rich flavor, if a bit on the
heavy side.
