While most of the selecti0on I have read so far is indeed easy to grow,, most
are not used with any regularity in period cookery and a good many are
readily available in fresh or dried form from the market year round.

For those who have limited space and wish to grow herbs useful in period
cookery, etc. which are not generally available year round or otherwise I
would suggest the following: Hyssop, lamb's ears, lemon balm, lovage,
gilliflower, nigella (love in a mist), marshmallow. Those with more space
might add edible gourds (such as luffa, Italian edible, birdhouse and bushel
basket), viniferus grape vines (for unripe verjuice grapes), red/white
carrots, fava beans (for fresh beans especially), sea kale, etc. For those
who have a large space, try adding Pippin apples, quince, species roses,
Zante grapes (for dried currants), long season leeks, galengal root, etc.

There is little to be gained financially if limited space is planted to
common and readily available foods if the thrust of the planting is to
provide ingredients for period recipes.
