[Sca-cooks] Bag o' persimmons

Tis' the season for massive amounts of persimmons...someone gave me a
grocery bag filled with them!  Is there something I can do with them that
would be interesting and tasty that is period?  I was thinking of making a
jam out of them, but I'm open to suggestion (impressionable as I am).
