One should also mention the Early English Text Society,
which publishes reprints of a lot of, well, Early English
books, and offers them for sale; I've carried several at
Pennsic. (Two Fifteenth-Century Cookbooks, Curye on
Inglysch are the cookbooks I remember off-hand).
Only thing is, they're somewhat on the expensive
side. . .

Check the website of

On the left-hand side, under "Publishing Imprints" will
be a drop-down menu with the EETS link.

(Boydell and Brewer are also the ones reprinting the Museum
of London books - Knives and Scabbards, Shoes and Pattens,
and the like. Good place!)
