Turkey Stuffing (Was Re: [Sca-cooks] TURKEY GRAVY)

I like to do stuffing with tiny wee bits of *stale* bread (usualy left over
from making own bread.  Need some planning, as you want to shred the bread
before it's all dried up :-} ).  Poached pears (the canned stuff in syrup
will work), chopped fairly fine.  Onions, also chopped fine, and those I'll
"melt" in a bit of butter before mixing them in the stuffing.  Fresh sage,
sliced in thin strips (the dried stuff just ain't the same).  A couple
whole eggs, beat in a little white wine, or water, or the syrup of the
pears if you made your own (white wine and honey!).  Salt, pepper.

I also cook it outside the bird, but since I bone my turkeys before I roast
them, that's kinda going without say!  Though I have worked in a place
where we'd slice a pocket open in the turkey breast (or chicken breast) and
piped the stuffing in.

As for stuffings I don't like, anything rice based tends to make me shiver.

Of course, this is for turkey.  For other beasties, I'd attack the thing
differently.
