The English recipe uses Lombard mustard, IIRC, which is elsewhere defined as being a whole-grain mustard preparation. Powdered definitely would not be the same. I STR getting good results with the coarse, semi-whole grain Grey Poupon and added honey, although IIRC Lombard mustard already contains honey.
