Personally, I really love tripes.  On a very similar line, andouilles.  Not
the andouilles of Louisianna and surroundings, but those from the South of
France.  Basically, pig's tummy, intestine, etc, stuffed in a casing of
intestine, poached, then smoked.

I must admit they are most horrid most everywhere, but my grand-mother used
to make some really awesome stuff.  Yum...

Of course, there's the generally dreaded Aussie Vegemite.  Though even as a
non Aussie, I've come to *love* the stuff when I was out there.  And it's
got to be Kraft, and don't try to pass me Marmite for Vegemite...

I ought to point out that tripes and andouilles are much more period than
Vegemite <evil grin>
