[Sca-cooks] Parsley roots?

Has anybody frozen them? I ran across a lot of them in the farmer's
market today, and thought they'd be good in a batch of compost for 12th
Night, but I doubt I'll have time to actually make the stuff in the next
couple of days.

Short of making a batch of parsley-root-only compost to be mixed at a
later date with compost-sans-parsley-root, I'm wondering about storage.

Any suggestions?
