But have you tried the period recipes for making your own fruit peel?
Even if you don't go to all the care and time they did, the results
can still be good. I have found good commercial candied fruit peel,
but not as good as the homemade stuff. Much of the commercial stuff
seems to use chopped peel in a candy base, rather than dipping slices
of peel repeatedly into a sugar syrup.

I have also found that I like most candied ginger, although even there
I find some variation between brands. I've never tried making candied
ginger myself.
