Parkin is a northern English specialty, similar to American cake-style gingerbread, but made with oatmeal. There are several types; some of them include candied peel or dried fruit in addition to the treacle and/or syrup and spices. Nowadays it seems to be mostly raised with baking powder or baking soda.
