Butchering??? Large animal? small animals? Birds?
If you are serious, I would check with the local/
state health departments and USDA/ag departments. You
could probably butcher for a demonstration, but you might
not be able to serve the meat. There are videos on butchering
game and birds. I'm sure that there are ones for hogs and
poultry too.
Or you might be able to set up a trip to an
actual butcher shop to see it happen, if you can find one
that processes its own animals. The various ag colleges
also offer courses in meat judging and meat grading. You
might want to contact them.
