The eyes sound great.  Cann't wait to see them.  What fun!

The recipe we used was from To the Queens Taste.  The Onion and Eel recipe.
Basically eel,lemon juice, salt, ginger, pepper, butter, onions, raisins put
in a pieshell and brushed with milk and bake.  Very tasty!
