This is my favorite.
Mincemeat fruitcake
1 lb mincemeat
1 cup walnuts
1 cup raisins
1 teaspoon vanilla
1 / 2 cup melted butter
1 cup sugar
2 egg yolks
2 cups flour
1 teaspon baking soda disolved in 1 tablespoon boiling water
2 egg whites
Mix ingredients in the order given, add stiffly beaten egg whites last.
Bake in a well greased and floured cake or loaf pan at 325 F. for about 1 hour.
Take approx 1 oz. of brandy or rum. Place in bowl and run some cheescloth through it. Wrap cake in cloth, and then foil.
