I agree that the average temperature in Atenveldt is
hotter than commonly expirienced in Europe of the
period and so foods cooked in hot ovens and over roaring
fires would be more common in the colder climes. But
there are a lot of Arabic and Mediterranian recipes that
also are stews or baked.

Also, a lot of the modern meals use similar techniques
in preparation. Even looking at the dinner for this weekend
shows a pre-made pottage (chili), stewed and grilled meats
(hot dogs), chopped vegetables, etc.... a period meal could
have been prepared with pretty much the same techniques.
The same goes for barbecue or whatever.

I think those who are interested in promoting period dishes
just need to send out more education to the populace. I've
seen the changes happen in other kingdoms and it can happen
here just as well. The first thing we all need to do is to
show the general populace that the stuff actually can taste
good, then have them believe that period dishes enhance an
event just as much as banners, clothing and music. This can't
be done overnight but it is possible. And after a while even
the diehard meat and potatoes folk feel a bit smug in enjoying
a period dish.
