treat?
Fried Peach Pies
4 peaches, peeled, pitted, and sliced
1/2 cup white granulated sugar
pinch of cinnamon
Pastry dough (enough for a two crust pie)
1/4 cup oil or melted lard
extra sugar for dusting
Mix peaches, sugar, and cinnamon well and cook
over medium heat until the peaches are tender but
not mushy. Set aside to cool while you roll out
the dough.
Roll out the dough into 4 inch circles.
Place two tablespoons of the peach mixture into
the center of each round and fold in half,
sealing the edges and marking all around with the
tines of a fork. Puncture once or twice to allow
steam to escape.
Heat the oil in a large, heavy skillet until a
bit of the dough dropped into it sizzles and
rises to the top.
Fry the pies in the oil until golden brown,
turning once.
Drain on brown paper and sprinkle with extra
sugar. Best when served hot with a cold glass of
milk.
Can also be made with a short biscuit type dough,
but I prefer the pastry dough.
