In canning catalogs [try vermont country village, lehmans, old time stores
like that, and some high end yuppie gizmo places like lechters] they have a
corn cutter that is 2 semi circular blades that are on a springy handle that
you sort of clamp around the ear of corn and slide down the cob, eliminating
that problem ;-)

If I could figure out where the heck mine is I'd give it to you because I
haven't canned corn in about 15 years!
